The number of gluten-free consumers and allergen-related food product recalls are on the rise. How can the foodservice industry equip themselves with the right knowledge and practices to keep pace? This webinar will provide an overview of the gluten-free consumer, current regulations and marketing surrounding gluten-free products, and special considerations for establishments when processing and sourcing gluten-free products and ingredients. In addition, we will provide tips on how to inspire customer satisfaction through sound marketing and credible certification.

Heather is a licensed Nutrition and Dietetic Technician who is passionate in serving those with special dietary needs and is an advocate for increased public health awareness and transparency in the food industry. In addition to accommodating those with special dietary needs in the clinical environment, heather has worked very closely with community programs such as Meals on Wheels, the Supplemental Food and Nutrition Program, the Family Nutrition Education Program, and the Capital Area Food Bank to increase awareness and availability of nutritious food for those who have nutrition-related concerns. Currently, Heather works with MenuTrinfo to perform nutrition analysis for foodservice establishments. Heather also provides allergen and celiac training to foodservice establishments through AllerTrain, and has recently added the role of allergen auditing to her repertoire.
